The Minotaur, also known as Bull, Minitaurus, Wisenkin, or Taurus, is a recurring enemy in the Final Fantasy series.
The Minotaur is a creature with a variety of appearances, but it usually possesses the head of a bull and the muscular body of a man, sometimes possessing a tail as well. Though their appearances have varied from intelligent humanoids to monstrous beasts, they are usually regarded as formidable foes, sometimes appearing only as bosses.

In the original Final Fantasy, minotaurs appeared as powerful enemies found in the Cavern of Earth and Mount Gulg, possessing powerful physical attacks. A variation known as the Zombie Minotaur also exists.
Final Fantasy III

Minotaurs in Final Fantasy III are found near the Crystal Tower on the World Map. These minotaurs display the ability to wield weapons, brandishing axes against the heroes.
Final Fantasy V

Sekhmet and Minotaur are two minotaur bosses found in Final Fantasy V. The two are brothers, and can be fought in the Fork Tower and the Pyramid of Moore, respectively.
Final Fantasy VIII

Sacred and Minotaur appear in the Tomb of the Unknown King in Final Fantasy VIII. Upon defeating both Sacred and Minotaur together, the two join the party as a Guardian Force, known collectively as Brothers. The two brothers are a reference to Sekhmet and Minotaur from Final Fantasy V.

A minotaur appears as a mid-boss in the Fractal Continuum dungeon. It fights in a manner similar to cyclops enemies, and during the fight players must release chimerical beings as bait to distract it from using a fatal swing attack.

The Minotaur is a race of enemies in Final Fantasy Tactics, consisting of the Wisenkin, the Minotaur, and the Sekhret. They can be dangerous enemies to face, due to their high HP and attack power, but they can also be powerful allies if recruited into Ramza's party.
Vagrant Story

The Minotaur is a boss in Vagrant Story, found in the Wine Cellar. Other minotaur creatures exist in Vagrant Story, such as the Minotaur Lord or the Minotaur Zombie.
Final Fantasy Mystic Quest

The Minotaur is a creature that is poisoning the Level Forest, disguised as a tree. It is fought as a boss with Benjamin and Kaeli. A weaker version of the Minotaur, the Minotaur Zombie, can be fought as a normal enemy in the Bone Dungeon.

After darkness spreads throughout the world, the Minotaur can be found as a random encounter inside Mount Gulg and the Quicksand Castle. A stronger version appears as a boss inside the Mysterious Lighthouse.

Etymology
Minotaur was a creature from Greek mythology with the head of a bull and the body of a man. He is descended from the union of the Queen of Crete and a white bull. He roamed the Labyrinth, where he hunted and killed a tribute of young men and women until he was slain by Theseus.
